Cashew Vanilla Granola Recipe

Preheat your oven to 325 degrees Fahrenheit. This is 162 degrees Celsius.

In a large bowl, 2 cups of old fashioned oats, 1/2 cup of roughly chopped cashews or almonds, 2 tablespoons of brown sugar, 1 teaspoon of ground cinnamon, 1/8 teaspoon of nutmeg, 1/4 teaspoon of salt.

In a smaller bowl, 4 tablespoons of melted coconut oil, 1/2 cup of honey or maple syrup, 2 teaspoons of vanilla. Whisk till combined. I chose honey because I prefer the flavor of it.

Pour the wet mixture in with the dry. Then stir to combine.

On a baking sheet, Place a piece of parchment paper. Then spread the mixture evenly across the pan. Bake for 30-40 minutes or until lightly browned. I did it for 30 minutes. You will need to turn it every 10 minutes.
